BBQ pork ribs and Chicken Wings…Say what??

Yes…I have managed to make one of my cheats into a paleo dish.

2 racks of pork ribs
1 cup of Homeade ketchup ( I used Ray’s paleo catsup)
3 tablespoon of minced onion
3 tablespoon of butter (unsalted, organic)
1-2 tablespoon of fresh squeezed orange juice

1-2 tablesoon of Worcestershire sauce or jerk sauce

1 tablesoon chili powder

1 tablespoon of cider vinegar

1 teaspoon fresh ground black pepper

Mix all ingredients together in a small pan and simmer over low heat for 10 mins. Store in an airtight glass jar for up to 3 wks.

Cut the racks in half. Cut off 4 pieces of foil double the length of 1/2 the rack of ribs. Brush olive oil on the foil then place the 1/2 rack. Brush the meat with your bbq sauce (I added minced garlic). Wrap up the 1/2 rack losely. Bake at 250 for 2 1/2 hours. Before serving unwrap the racks brush them with more sauce , place them directly on the bbq (grill) till crispy, approx 5 mins on medium.

This recipe never fails me, never do we have to fight our meat off the bones!!! My Children Love eating these, they get to eat with their fingers.

24 chicken wings
1 egg
1 cup of almond flour
1 teaspoon of hungarian paprika
1 tablespoon of garlic powder

1 teaspoon of fresh ground pepper

1 teaspoon of onion powder

Whisk the egg in a medium size bowl. Mix all dry ingredients in a large Ziplock bag. Dunk wings into the egg wash and then drop them into the dry bag mixture making sure the whole wing is coated. Place them all in a baking dish and bake at 250 F for 45 mins or until golden. Voila!
