Coconut Cookies

I received a few e-mails  from parents asking  me what I would send for snacks in my sons lunch box.  Alot of his snacks at home are either nuts or nut based and now that most school have become  NUT free due to allergies. We’re left with little to no option other than fruit and veggies which I know he would grow tired of .

Over the weekend I started playing around with recipes and I created this one, my kids were the testers and they gave me a thumbs up!

Coconut Cookies

1 cup of coconut flour

1/2 cup of coconut oil

1 cup of sucana

4 eggs

1/2 tsp of vanilla

1 1/2 cup of flakes coconut (free of additives)

3/4 cup of drk choc chips, nuts or dried fruit.

Pre-heat oven at 350f . Mix together oil, sucana, eggs, vanilla.  Stir in coconut and coconut flour. Drop batter in spoon-sized amount 1 inch apart on a parchment paper lined cookie sheet.  Bake for 10-13mins. Remove from sheet and let cool.  Makes about 2 x12.

I put 2cookies  in little snack size ziplock bags ( gave me 12 bags) and froze them in a large freezer ziplock bag.  Everyday I take a bag out of the freezer and put it in his lunch and they thaw by recess.

    this recipe looks yummy but what is sucana??

    sucanat is sugar in it’s most natural form, therefor has most of it’s vitamins and minerals, although sugar is sugar, it still has the same affect, just less processed or refined.
