Easy Paleo Shrimp and Greens

When life gets “eventful”, I still find the time to make my way into the kitchen, not only to feed my family but because I enjoy it so much.  I must say, I’ve been creative these days with recipes that take little time to prep and to cook so that I can be in and out as quick as possible.  From start to finish, it took me about 30 mins to make this dish.

Ingredients (serves 2)

16-20 jumbo shrimp ( uncooked, and shelled)

1 leak sliced thin

2-3 garlic cloves

2 cups of asparagus  chopped (1 inch in length)

4-5 kale leaves (remove pieces from stem)

1 tsp of garlic powder

2 tbsp of coconut oil

pepper to taste

Instructions

In a frying pan, add oil, asparagus, leek, garlic on med, keep stirring for about 8 mins.

Add shrimp and garlic powder and cook until they’re completely cook through. approx. 5-10 mins.

Add kale and fry for another 3 mins until kale is wilts.

TADA! That easy and sooooo tasty!   ENJOY!

    Oh so good, I made it a bit spicier with chili, maharaja curry, ginger, and cinnamon in small doses and it’s definitely one of my top 5 to make.
