Paleo Sushi rolls
I use up my cheat to eat sushi, I don’t get anything other than 2 orders of sushi rolls and I don’t share with anyone. lol….I’ve been wanting to attempt making sushi for a while so after receiving my coconut aminos last week the first thing that popped into mind was sushi!!! I was beyond excited when It turned out and instead of rice I used avocado to make the nori wrap stick, I bought a bamboo thingy to help with the rolling, not sure if I’m using it properly but the end result was great, a little messy but who cares, it was sooooo worth it. This is my interpretation of a dynamite roll from our local japanese restaurant. There is missing a few ingredients but it definitely satisfies my cravings for japanese food.

INGREDIENTS
1 bag of shrimp (cooked, cooled and chopped)
1 avocado
1/2 of a cucumber (sliced very thin)
3 tbsp of paleo mayo
1/2 tsp cayenne pepper ( omit if you don’t like spicy food)
1/2 tsp garlic powder
4 nori wraps (seaweed wraps)
2 tbs coconut aminos
pickled ginger (optional)
INSTRUCTIONS
Mix mayo, cayene pepper and garlic powder to make the spicy mayo. Peel and remove pit from avocado and mix into a smooth texture.
Place the wrap on the bamboo “thingy”. Spread avocado on about 1/3 of wrap then place 1/4 of the cucumber next to the avocado, spread spicy mayo on the other 3rd and spread shrimp to cover the mayo. Then roll up using the instructions above, they might be a little messy but definitely worth every bite. Dip sushi in the coconut aminos instead of soy sauce.

These are wonderful!!! I modified them slightly, and “wonderful” went to “incredibly awesome”!
I covered the seaweed with avocado then put a few scoops of cauliflower rice ontop and pressed it down, then added the rest of the filling. (for cauliflower rice, put raw cauliflower in the food processor until it’s a “rice” texture, then steam it)
