Paleo Almond Chicken Bites
I made these over the weekend for the Kiddos but found myself munching on them as a snack….I suggest you do the same!
Quick, Easy and tasty
like always….
Ingredients
3 chicken breast or 6 tenders ( chopped in 2″ cubes)
1 1/2 cups of almond flour
2 eggs
2 tbsp of water
pinch of peper
pinch of garlic powder
add what ever spice you’d like
Instructions
Serves 3 hungry children and a snacking mama.
Preheat oven to 375
In one small bowl beat eggs then add water. In an other bowl mix almond flour, garlic powder and pepper (along with any other spice you’d like to add). ”Dunk” the chicken in the egg wash and then into flour. Place chicken on a parchment paper lined baking sheet. Bake for approx 18-20 mins, flipping the chicken pieces over midway.
I served the chicken with honey glazed carrots, which the kids love.
Slice carrots (approx. 4 large) thinly and fry in 1 tbsp of coconut oil and 1 tbsp of raw honey, over medium heat

hi josee im a first time healthy eater,long time fan. i want to start using your paleo meal plans for my hole family,my kids nonkon,ienni,and their mother arlene all have been to your class at one time or another and they all enjoy it,and im glad they all enjoy it.i my self would like to attend a few of your sessions and apply healthy eating to our daily routines my kids both play lacrosse and i ironwork and arlene too has a busy schedule,is there any special meal that i can make on game days or for the weekend of our tournaments to keep my kids full of energy through the course of the games that will help them to play to their full potential and help me get us out of the routine of eating the crap they sell at every arena we go to.Thanks Kody Thompson
Always being prepared is the key element to success on the paleo diet and especially when transitioning your whole family. We always make sure we have plenty of protein cooked and ready to eat or easy to grab and go. When we know we’ll be away from home for a while, I always make sure to bring food with us so we’re not sucked into eating for convenience. Food that I typically bring would be, hard boiled eggs, cubed chicken, nitrite free/ organic peperetts, trail mix/mixed nuts, dried fruit, fresh fruit and raw veggies. I wouldn’t necessarily recommend a certain meal before playing sports, just make sure it includes all three primary macro nutrients Protein-meat/fish/eggs, Carbs- veggies and Fat-Oil. As for the weekends away, again be prepared, make an large salad that will last the weekend, roast a chicken before leaving, bring a ton of snacks and hit a grocery store when you get to your destination to stock up on the food you would eat when you’re home also finding a hotel that has a kitchenette and stay within the guidelines when eating out. Kids will eat when they’re hungry, I have an “eat when you’re hungry” type of policy but it has to be paleo friendly food and I always give them lots of options to chose from, that seems to work for us.
