Caveperson’s Wedding Soup (paleo)
” When a caveperson was attracted to another caveperson, all s/he did was club him/her over the head and drag him/her off to a cave by the hair. It was that simple, and had the great advantage of leaving the clubbed one in absolutely no doubt that s/he was lust-worthy.”
Then they hunted, gathered, made wedding soup and ate it…..
This is my PALEO version of italian wedding soup.
Here’s the recipe
INGREDIENTS
mini meat balls
2 lbs of organic grass fed ground beef or pork (*from Peasant’s Craft )
1tbs of fresh thyme chopped
1 tspn of garlic powder
1/4 cup of almond flour
1 tspn of italian seasoning
1 egg
salt and pepper
mix all ingredients in a large bowl and roll into little balls (3/4 inch in diameter.) and bake @ 350 for 15 mins
Soup (while balls are in the oven)
2 boxes of organic chicken broth (low sodium)
4 cloves of garlic, minced
1 med onion, chopped
1 bunch of asparagus (hard ends chopped off) cut 1 inch long pieces
2-3 cups of baby spinach
1 zucchini, chopped
1 tbsp of italian seasoning
1 tbsp of olive oil
20-25 cherry tomatoes cut in half
sea salt and pepper to taste
In a big pot add oil, italian seasoning, onions and garlic, sauté over medium heat till onions are translucent. Add broth ad the remainder of ingredients. Add meatballs and bring to a boil over med-high heat then bring the heat down to low and simmer until the veggies are tender, Approx. 30-40 mins

This soup is even tastier the next day. Kids loved it, especially because they rolled the meatballs for me.
