Paleo Tuscany Salmon Salad

Easy, Quick…On the go type of salad.

Ingredients (serves 1)

1 can of wild, boneless, skinless salmon

2 cups of baby spinach

1/2 avocado (thinly sliced)

1/2 cup purple cabbage (chopped)

5 sundried tomatoes (chopped)

2 tablespoon onions (chopped)

Dressing

Drizzle- Olive oil, lemon and pepper to taste.

Instructions

Mix all ingredients (not salmon) pour dressing  and then add salmon on top.  Enjoy
