“Paleo Back Yard Soup” (Tomato soup)

I must admit this soup was not created by me nor were all the ingredients from my garden…My good friends Angela and Glenn, who just happen to live right next door to me have a garden full of fresh vegetable and herbs.  They created this soup using every ingredient from their garden, To my luck, I had the opportunity to try it and let me tell ya, it was definitely satisfying to my palate, after eating the entire bowl in 3 mins, it left me wanting more sooooooo…….I made a pot of my own.  I hope you all enjoy this refreshing soup as much as I did.

Fresh Paleo Tomato Soup


Tomatoes approx. 20-22 (different variety of tomatoes)

I aslo added some cherry tomatoes for sweetness

1 small red pepper

1 small green pepper

1 onion

2 tablespoon of fresh basil chopped

1 tablespoon of fresh oregano chopped

3 cloves of garlic chopped

1 small jalapeno pepper chopped

Salt and pepper to taste


Peel tomatoes (add them to boiling water for 2 mins, the skin should easily peel off).  Puree tomatoes in a processor or blender. Then add to a large soup pot.  Add remainder of vegetables, herbs and garlic in the processor, chopped finely and add to tomatoes. Bring to boil and simmer for 30-45 mins on low.  Stir frequently.
