Paleo Style Sheppards Pie
This recipe comes from Tash (Crossfit Akwesasne). Over the past 8 months, Tash has been working hard to make a difference in her families nutrition. Completely switching to a paleo lifestyle, Tash has been enjoying cooking, creating new paleo dishes and introducing them to her family. I asked her to send me pictures and recipes to feature them on the site and this is one of many to come….I hope….
Sheppards pie
Ingredients:
1 1/2 – 2 lbs of organic ground beef
1 tbsp rosemary
1 tbsp ground pepper
4 garlic cloves
1 medium red onion
1 bag of carrots
2 heads of cauliflower
butter
a dash of celery seed
paprika
1. Cut cauliflower into small florets and steam them for about 30 minutes till tender.
2. Brown beef on stove in skillets with onions, garlic, pepper, celery salt and rosemary until brown, while that is cooking shred carrots and cut tiny pieces in food chopper.
3. When cauliflower is tender, mash them (I used a handheld mixer, added butter and whipped them).
4. Use a 9X13 casserole dish, add beef mixture at bottom then top with carrots then mashed cauliflower, sprinkle paparika over cauliflower .
5. Bake for 45 minutes at 365*F
* My Family would of rathered I steam and mash the carrots before adding them.
