Swiss Chard Frittata

This is a  great snack or meal idea, high in protein and you could add any veg or meat to create your own concoction. Also great to use up last night’s leftovers. Be creative and enjoy..I’m always looking for quick meal ideas and this one absolutely falls on the top of my list. I found this recipe in The Primal Blueprint cook book by Mark Sisson.

Ingredients:

1 Tbsp oil

2 Tbsp finely chopped onions

1 bunch of Swiss Chard, finely chopped

6 Eggs beaten

1-2 Tbsp of dried or fresh herbs

Serves 4-6

Instructions:

Warm oil in an oven proof sauté pan and sauté onions until they soften. Add Swiss Chard and sauté until it wilts, about 5mins. Add herbs. Pour into eggs, stir quickly then let cook until they just barely begin to set. The frittata can be finished 3 ways; turn the heat down to med-low and put a lid over the eggs; put the pan under the broiler for 3-5mins; finish in the oven at around 375 F
