Garlic Swiss Chard
When doing groceries I challenge myself every week and buy a vegetable that I’ve never tried or even heard of and then I figure out what it is and how I’m going to cook it. This week was red swiss chard. Now, I have heard of red swiss chard but I never cooked it as a side dish. When researching different recipes I also read up on the vegetable. Here are some nutritional information I gathered on red swiss chard.
Swiss chard like spinach has many phytonutrients that have health promotional and disease prevention properties.
They are also an excellent source of anti-oxidant vitamin, vitamin-C. I’ts fresh leaves provide about 33% of recommended levels per 100 g.
It is one of the excellent vegetable sources for vitamin-K; 100 g provides about 700% of recommended intake.
It is also rich source of omega-3 fatty acids and B-complex group of vitamins such as folates, niacin, vitamin B-6 (pyridoxine), thiamin.
It is also rich source of minerals like copper, calcium, sodium, potassium, iron, manganese and phosphorus.
So now that you know all this information, how can you not try it?
Here’s one of the many tasty recipes I found. It’s simples and can be paired up with pretty much anything. I made extra to either throw in a salad or in my eggs tomorrow.
Gralic Swiss Chard.
Swiss Chard Frittata
This is a great snack or meal idea, high in protein and you could add any veg or meat to create your own concoction. Also great to use up last night’s leftovers. Be creative and enjoy..I’m always looking for quick meal ideas and this one absolutely falls on the top of my list. I found this recipe in The Primal Blueprint cook book by Mark Sisson.

Ingredients:
1 Tbsp oil
2 Tbsp finely chopped onions
1 bunch of Swiss Chard, finely chopped
6 Eggs beaten
1-2 Tbsp of dried or fresh herbs
Serves 4-6
Instructions:
Warm oil in an oven proof sauté pan and sauté onions until they soften. Add Swiss Chard and sauté until it wilts, about 5mins. Add herbs. Pour into eggs, stir quickly then let cook until they just barely begin to set. The frittata can be finished 3 ways; turn the heat down to med-low and put a lid over the eggs; put the pan under the broiler for 3-5mins; finish in the oven at around 375 F
